Ingredients
  

  • 200 grams sourdough discard
  • 70 grams honey or maple syrup
  • 250 grams whole milk
  • 8 grams vanilla extract
  • 5 grams butter extract
  • 6 tbs melted butter
  • 255 grams all-purpose flour
  • 2 eggs
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • olive oil spray

  • 1 Waffle maker
  • 1 1/3 cup measuring cup

Method
 

Make Waffle Batter
  1. Combine milk and sourdough discard in a large mixing bowl. Mix until it becomes "frothy".
    200 grams sourdough discard, 250 grams whole milk
  2. Add honey, vanilla, and butter extracts and mix thoroughly.
    70 grams honey or maple syrup , 8 grams vanilla extract, 5 grams butter extract
  3. Melt the butter until just melted and add it to the bowl.

  4. Lightly beat the eggs in a separate bowl, then add them to the mixture and mix thoroughly.

  5. Add the salt, baking powder, baking soda, and flour to the bowl. Mix until fully combined.

  6. Cover and let this sit for 15-20 minutes while you heat your waffle maker or nonstick cooking pan.
Cook Waffles
  1. Heat up your waffle maker and spray it with olive oil or grease it with butter.

  2. Carefully spoon the batter into your waffle maker and cook for about 3 to 4 minutes. You'll make about 12 waffles, depending on the size of your waffle maker.
  3. Cooking times may vary depending on your specific waffle maker. Or if you're making these as pancakes in a pan, it will obviously be a bit different.

  5. Let them cool completely, then store them in a freezer bag and freeze for up to 6 months. Take one out when you're ready to toast it!
