Make Waffle Batter
- Combine milk and sourdough discard in a large mixing bowl. Mix until it becomes "frothy".200 grams sourdough discard, 250 grams whole milk
- Add honey, vanilla, and butter extracts and mix thoroughly.70 grams honey or maple syrup , 8 grams vanilla extract, 5 grams butter extract
- Melt the butter until just melted and add it to the bowl.6 tbs melted butter
- Lightly beat the eggs in a separate bowl, then add them to the mixture and mix thoroughly.2 eggs
- Add the salt, baking powder, baking soda, and flour to the bowl. Mix until fully combined.1 tsp salt, 1 tsp baking powder, 1 tsp baking soda, 255 grams all-purpose flour
- Cover and let this sit for 15-20 minutes while you heat your waffle maker or nonstick cooking pan.
Cook Waffles
- Heat up your waffle maker and spray it with olive oil or grease it with butter.olive oil
- Carefully spoon the batter into your waffle maker and cook for about 3 to 4 minutes. You'll make about 12 waffles, depending on the size of your waffle maker.

Let them cool completely, then store them in a freezer bag and freeze for up to 6 months. Take one out when you're ready to toast it!
